Baked French Brie Cheese with Honey and Blueberries

Spring is almost here, and I have been getting an itch once again for warm weather food. It is also St. Patrick’s Day so why am I making a French cheese? Well, it’s because I’m taking a break from preparing today’s corned beef, and this recipe is very quick, easy and delicious. I love baked Brie with honey and fresh blueberries. Last summer I purchased some local honey from a friend of a beekeeper. I also had a round of Brie to use. This French Brie round is From Normandy, France and has aged. Brie will have different tastes and textures depending on its age. When young, the texture is firmer and the cheese has a mild flavor. Aged, it is creamier and has a full-bodied rich flavor. Both are wonderful. Give it a try! Baked Brie makes a delicious light lunch. It also works well as an appetizer. This was served with plain sea salt crackers. I try to avoid flavored crackers to bring out the flavor of the cheese. Think spring!

 

Ingredients

• Round of Brie (14 oz.)
• 1/2 cup fresh blueberries
• 2 Tbs. raw local honey
• Sea salt crackers or sliced bread

 

 

 

Instructions

1. Preheat oven to 350 F.
2. Place the round of Brie on parchment paper on a baking sheet or oven proof pan.
3. Drizzle the honey over the top, and scatter the blueberries on top.
4. Bake for 10 to 15 minutes depending on the size of the round.

 

 

5. Remove the Brie from the oven and place it on a plate.
6. Cut through the rind with a cheese knife to release the melted cheese.
7. Serve the Brie with crackers or bread.

This French Brie cheese recipe was so easy, and it turned out really well. The cheese oozed out of the rind after it was cut open. It had a really nice flavor and was wonderful with the fresh blueberries and honey. I will make this again and try different berries as they come into season.
