Sautéed Green Beans and Portobello Mushrooms with Walnuts

This is a very simple and colorful recipe with the green of the beans and the mushrooms. The taste of the Portobello mushrooms and beans along with the garlic and lemon are an awesome combination of flavors. Give this a try. I think you will enjoy it!

 

Ingredients

• 3 cups fresh green beans, trimmed

• 2 large portobello mushroom caps, washed and sliced into 1/2” strips

• 3 cloves garlic, minced

• 1/4 cup chopped walnuts

• 4 Tbs. olive oil

• Juice of 1/2 lemon

• Coarse sea salt, to taste

 

 

 

Directions

1. Heat olive oil in a large sauté pan over medium heat. Add the garlic and sauté about two minutes.

 

 

2. Add the mushrooms to the pan and sauté for an additional 2 minutes.

 

 

3. Add the beans and continue cooking for about 4-5 minutes.

4. Place on a plate and squeeze the lemon juice evenly over the top. Add the chopped walnuts.

Sprinkle sea salt to taste. Serve immediately. Serve with a loaf of artisan bread, if desired.
