Waldorf Salad

The Waldorf salad was first made in 1896 at the Waldorf-Astoria Hotel in New York City and was originally just apples, grapes, and mayo. The nuts, which in my opinion make the salad, were added years later. This is a fantastic classic salad that has endured the test of time. Some variations of this recipe use different fruits, nuts, meat and the zest of lemons and oranges. I stuck closer to the classic recipe. This makes a perfect fall dinner salad.

The Waldorf salad is made of apples, red grapes, walnuts, celery, and mayo. That is it. I made mine with some of the apples I purchased at Hill Brothers’ Orchards. While I was there I couldn’t resist buying more of their cider which I love. I even bought enough for Thanksgiving.  I own a vintage cooking dish by Russel Wright who was a well know modern industrial designer from the 20-60’s so I used that in the photograph. It worked well as the salad bowl. This salad made a tasty light dinner for my wife and me on a cool fall night. We paired it with a glass of white wine and a loaf of artisan white bread. As we were carrying it from the kitchen, we noticed the beautiful color of the burning bush in our backyard.

 

 

 

 

Ingredients

• 6 Tbsp. mayonnaise

• 1 Tbsp. freshly squeezed lemon juice

• 1/4 tsp. sea salt (crushed)

• 1/2 tsp. freshly ground black pepper

• 2 apples, cored and chopped (I left the skin on and cut them into small cubes.)

 

 

• 1 cup red seedless grapes, sliced in half

• 1 cup celery, thinly sliced

• 1 cup chopped walnuts (I toasted mine.)

• a small bunch of leaf lettuce (I used mixed greens.)

 

 

 

Directions

1. Wash the lettuce in a salad spinner or colander and pat it dry.

2. In a medium-size bowl mix the apples, lemon juice, grapes, mayonnaise, and walnuts.

3. Line the serving bowl or separate plates or bowls with lettuce.

4. Spoon the mixture over the bed of lettuce.

5. Sprinkle on salt and pepper to taste.

Serve immediately.

  • 1 cup red grapes seedless, sliced in half
  • 1 cup celery think sliced
  • 1 cup walnuts chopped, toasted (optional)
  • 1 bunch lettuce greens I used leaf lettuce

Instructions

  1. Wash the lettuce in a salad spinner or colander and pat it dry.

  2. In a medium-size bowl mix the apples, lemon juice, grapes, mayonnaise, and walnuts.

     

  3. Line the serving bowl or separate plates or bowls with lettuce.

  4. Spoon the mixture over the bed of lettuce.

  5. Sprinkle on salt and pepper to taste.

  6. Serve immediately.
