Summer Mixed Green Salad

I can’t believe how fast this summer is going! The weeks are just flying by! We have been busy and have been doing a little traveling but not too far – mostly stay-cations and heading to the cottage when we can. We have been trying to social distance and have had some small picnics in our backyard. It has been crazy with this virus. It has limited our exposure to friends and family, but we are playing it safe. I hope a vaccine is around the corner so we can all get back to our daily lives.

We have a friend who made a delicious salad similar to this one (thanks Laura G!) so I thought I would give it a try. I used freshly picked blueberries. The combination of fresh greens, blueberries, raspberries, walnuts (you could easily substitute pecans), goat cheese, and red onion was delicious. I added a light raspberry vinaigrette with poppy-seeds and then sprinkled a bit of freshly ground pepper and sea salt on top.

Ingredients

• 6 cups mixed greens

• 1/2 cup fresh blueberries

• 1/4 cup fresh raspberries

• 1/4 cup chopped walnuts

• 1/4 sliced red onion

• 2 Tbs. goat cheese, crumbled

• Freshly ground black pepper and salt, to taste

 

 

 

Directions

1. Wash the greens in a colander or salad spinner.

2. Gently mix together the greens, blueberries, raspberries, walnuts, and red onion in a bowl.

3. Plate and top with goat cheese and salt and pepper to taste.
