Strawberry Riviera Salad with Poppy Seed Dressing

It is finally summer! This is the best time for fresh fruit and veggies. I just picked up fresh strawberries from my favorite Grand Rapids, Michigan strawberry farm, The Morse Brothers’ Farm. The Morse family has been farming strawberries for generations. Their strawberries are the best I have ever had, and I have been buying from them for over twenty years. The Morse family is a hard-working farming family. They are determined to continue bringing the best local fruit to your table. Farming is hard work, and they may be working in the fields or delayed by weather. It is a short season so get out before they are gone. This is an easy salad to make and is perfect for a light lunch or as a side salad. You can tell when you purchase real Michigan grown strawberries because when you cut through them they are red all the way through! I also was able to harvest some of my fresh lettuce which is so tasty. Enjoy the fruits of summer.

 

 

 

 

Ingredients

• 10 oz. baby spinach

• 10 oz. fresh romaine lettuce

• 10 oz. strawberries

• 1/4 cup red onion, finely diced

• 1/4 cup walnuts or pecans (I used walnuts.)

 

Poppyseed Dressing

• Juice of 1 lemon

• 2 tsp. white wine vinegar

• 1 tbsp. white sugar

• 1 tbsp. olive oil

• 1 tsp. poppy seeds

 

Directions

1. In a small glass mixing bowl or mason jar, whisk together the lemon juice, white wine vinegar, sugar, olive oil, and poppy seeds until combined.

2. Wash lettuce in a salad spinner or colander and pat dry. Slice the strawberries into quarters and slice the red onion very thinly.

3. In a medium-large bowl, combine spinach, lettuce, strawberries, and the red onion.

4. Pour dressing over the top and toss the salad lightly.

Serve immediately.  Enjoy this summer treat!
