Steamed Artichokes with Garlic and Lemon Aioli Sauce

My wife purchased these artichokes at Trader Joe’s this week, and I thought I would make a simple steamed artichoke recipe from them. It’s super simple and easy.

 

Ingredients 

• 3⁄4 cup mayonnaise

• 1 clove garlic, minced

• juice and zest of one lemon

• 1/4 tsp salt

• 1/2 Tsp. fresh ground black pepper

 

 

Directions

1. Using a sharp knife, cut about 1-inch off the top of the artichoke. Cut off the stem. Snip sides to remove barb.

2. In a medium-size pan, boil two cups of water and place the artichokes stem side down in a steamer basket or rack.

3. Allow to steam for 45 minutes.

4. While steaming the artichokes, make the aioli dipping sauce by combining mayonnaise, garlic, lemon juice, lemon zest, salt, and pepper. Serve in a ramekin alongside the steamed artichokes.

 

This recipe turned out really well. I liked the taste of the artichoke hearts with the dipping sauce. Squeeze a little lemon juice over the artichokes when complete. The aioli dipping sauce is delicious with the artichokes!
