Shrimp and Pineapple Tacos

I love shrimp! I especially enjoy the combination of shrimp and fresh pineapple with a little heat from a jalapeño added. I have made this recipe about ten times and keep going back to it as a favorite. These tacos are easy to make and taste great. There are never any leftovers. Enjoy!

 

Cooking Ingredients

• 1/2 cored fresh pineapple (you can use canned but it’s not quite as good)

• 1 small red onion, sliced very thin

• 2 Tbs. lime juice

• 1/4 tsp. sugar

• 2 Tbs. extra-virgin olive oil

• 1/4 tsp. fresh ground pepper

• 1/4 tsp. ground salt

• 1.5 pounds large shrimp (15-20 shrimp)

• 3 Tbs. Sriracha

• 10 – 6” corn tortillas (cooked over a gas stove top)

• 1 avocado, sliced

• 1 jalapeño, sliced very thin

• 1/2 can black beans

• 1/2 cup fresh cilantro

• 2 limes, cut into wedges to be used as a garnish

Cooking Directions

1. Core pineapple and cut into small wedge shaped pieces.

2. In a small bowl, combine sugar, lime juice, pepper, salt and red onion allowing to marinate.

3. Soak wood skewers in water. Peel shrimp from shells and put into a bowl. Add 2 Tbs. Sriracha and 1 Tbs. olive oil and stir to coat shrimp. Season with ground pepper and salt.

4. Place pineapple on a rimmed baking sheet and coat with 1 Tbs. olive oil. Toss to coat evenly. Place on second highest rack setting and broil on high for five minutes until the pineapple starts to brown. Flip pineapple over  with a metal spatula and broil the other side an additional 5 minutes.

5. Add the shrimp to the baking sheet and broil 3 minutes until shrimp are no longer clear. Flip and repeat.

6. Remove the shrimp and pineapple and combine in a large bowl and add the marinated juice from the onion mixture and one additional Tbs. Siracha and stir all together.

7. Put shrimp and pineapple onto wooden skewers and sprinkle with salt and pepper. Broil an additional two minutes.

8. Put shrimp into tortillas and add onion mixture, jalapeños, avocado slices and fresh cilantro. Squeeze fresh lime juice over top and serve. I made a simple black bean salad as a side. Enjoy!
