Homemade Granola

We are still using up what we have in our pantry so we don’t have to make any unnecessary trips to the grocery store because of the COVID-19 virus. I decided to make homemade granola with ingredients we had on hand: oats, dried fruit, local honey, eggs, nuts, and a few other things. I love the taste of homemade granola with fresh fruit and plain yogurt or milk. It makes the perfect breakfast or anytime snack. Also, it can be stored in mason jars or bagged in sandwich bags as snacks for walking, hiking, or cycling which we have been doing often. Granola also makes a good trail mix if you add additional dried fruit and chocolate. We love to have it while out and about. Give this simple recipe a try. I think you will really like it. Ingredients

• 1 Lg. egg, lightly beaten

• 3 cups old-fashioned rolled oats

• 1 cup almonds, sliced. I also added whole almonds.

• 3/4 cup honey (or maple syrup)

• 1/2 cup olive oil

• 1/2 cup brown sugar, packed

• 1 tsp. pure vanilla extract

• 1/2 tsp. salt

• 1/2 tsp. cinnamon

• 1/2 cup dried cherries (You can use any dried fruit.)

• 1/2 cup raisins

 

 

 

 

Directions

1. Preheat the oven to 350 degrees F.

2. In a large bowl, mix together the egg whites, oats, nuts, honey, olive oil, vanilla, brown sugar, cinnamon, and salt with a large wooden spoon.

3. Spread the granola mixture on an 11” x 13” or larger rimmed baking sheet. Make sure to evenly spread the mixture on the baking sheet. Bake for 40 minutes turning the granola a few times while baking.

4. Let the granola cool and add the dried fruit.

5. Place granola in a mason jar, lidded storage jar, or a large zip-lock bag.

 

I have made this twice since writing this post. The last time I used maple syrup rather than honey. This is a great simple snack that the family loves. If you have young children this is a perfect project if you are looking for things to do while we wait out the COVID-19 virus.
