Greek-Style Lamb Gyros with Tzatziki

I have recently been shopping at the local Mid-Eastern grocer and have been using their fresh pita bread for this simple recipe. They make it every day so the bread is awesome. I have also purchased the lamb by the pound at a local pita restaurant. The lamb is precooked and comes off a spit so when you get home you just have to reheat it in a skillet. These are very tasty and super simple to make.
Ingredients
• 1 lb. shaved lamb
• 4 pitas
• 2 roma tomatoes, sliced
• 1 garlic clove, minced
• 1/2 tsp. fresh lemon juice
• 1/2 tsp. olive oil
• 1 small red onion, thinly sliced (you can use a sweet white onion)
• 3 oz. lettuce
• 1 tsp. dried dill (fresh is even better if you have it)
• 1 cup plain yogurt
• 1 medium cucumber, skinned and chopped
• 2 Tbs. Feta cheese
• salt and pepper to taste
Directions
1. Heat the pita bread one at a time in a skillet and swirl it around with a small amount of butter to warm. Cover with a towel on a plate until meat is done.
2. In a second skillet, heat the lamb over medium heat for 3-5 minutes flipping side to side with a pair of metal tongs.
3. To make the Tzatziki sauce, combine the yogurt, lemon juice, olive oil, dill, garlic and cucumber in a food processor or blender and process for about 10 seconds until smooth. Making this in a blender helps because you can just pour it from the blender.
4. Add the meat to the warm pita and add lettuce, sliced tomato and red onion. Drizzle the Tzatziki and top with crumbled feta cheese. Wrapping them in tin foil helps keep them together for serving. Enjoy!
