German apple pancake

When I first met my wife she made German apple pancakes for me. She still makes them to this day. I will admit that like our dog  “Fritz” I’m super spoiled! My wife in her own right is an excellent cook and she taught me how to make these so I am using her recipe and we always use the same cast iron skillet when making. A thirty-year-old yellow Le Creuset which to this day works just perfectly. Best when apples are in season.

 

Ingredients

 

• 3 large eggs

• 1 cup whole milk

• 2 Tbs. sugar

• 3 Tbs. unsalted butter

• 3/4 cup all-purpose flour

• 1/2 tsp. salt

• 2 tart baking apples, peeled and sliced (Northern spy when available)

• 3 to 4 Tbs. unsalted butter

• confectioners’ sugar (for the top)

 

Cooking Directions

1. Preheat a 10-in. cast-iron skillet in a 425 degree F oven.

2. Combine the eggs, milk, flour, salt. Cover and process until smooth.

3. Add butter to hot skillet; return to oven until butter bubbles. Pour batter into skillet. Bake, uncovered, for 20 minutes or until pancake puffs and edges are browned and crisp.

4. Add the apples, butter, and sugar; cook and stir over medium heat until apples are tender. Spoon into a baked pancake. Sprinkle with confectioners’ sugar. (we cut in half) serve immediately.

You can use a variety of different ingredients including raspberries, blueberries, peaches, pears. You do not have to pre-cook berries so skip that step. Enjoy!
