Spinach and Fruit Salad with Pecans

Can you tell I’m ready for summer? I made this spring/summer salad in celebration of warmer weather. We have had a couple of days of sunshine in a row. Also, I need to start a diet and start putting miles on my bicycle once again.

This fruit salad is very easy to make and healthy and only took a few minutes to make. I will make more of these for sure and change up the dressings. All the ingredients were purchased at Ken’s Fruit Market. I’m looking forward to shopping at the local farmers’ markets. I’m also looking forward to planting my backyard garden.

 

Ingredients

• 6 cups fresh spinach

• 1/2 cup blueberries

• 1/2 cup raspberries

• 1/2 cup blackberries

• 1/2 cup mandarin oranges

• 1/4 cup pecans, chopped

 

 

For the Dressing:

2 Tbs. extra virgin olive oil

1 Tbs. fresh lemon Juice

1 tsp. honey

Sea salt and fresh ground pepper, to taste

 

Directions

1. In a medium bowl, add the fresh spinach, blueberries, blackberries, mandarin oranges, and pecans.

2. Toss everything together by hand.

3. In a small bowl or lidded jar, stir the salad dressing ingredients (olive oil, lemon juice, salt, and pepper).

4. Gently toss the salad ingredients with the dressing.

  2. Toss everything together by hand.

  4. Gently toss the salad ingredients with the dressing.

Recipe Notes

Best to eat entire salad once the dressing has been put on. Super simple to make and very healthy.
