Cubano “Pickle” Pizza

If you like Cubano sandwiches you are going to love Cubano pizza! I had a Cubano pizza at a local micro brewery a couple of years ago and thought it tasted awesome. With some experimentation I learned how to make them myself and have been making them ever since. I typically make my own dough, but this time I purchased one from a local Mid-Eastern Grocery store. I have made traditional pizza on these round breads, and they are the best store purchased crusts I have ever had. You could use store bought Bobali as a substitute which looks very similar. (not sure about taste?) This is a very simple way to make pizzas and takes very little time.
Ingredients
• 1-12” round pizza dough (Bobali substitute)
• 4 tbs. yellow mustard (sauce)
• 1 cup mozzarella cheese grated
• 8 oz. pulled pork (precooked)
• 3 medium-size dill pickles, sliced
Directions
1. Preheat the oven to 450 degrees. Place a pizza stone or pizza steel on the middle rack and heat for at least 15 min. While heating you can prepare the pizzas.
2. Sprinkle corn meal on a pizza peel or baking sheet. and place your round pizza crust on it. In circular motions apply yellow mustard to the top of the crust (approximately 4 tbs.). With the back of a large spoon, spread mustard to about an inch from the edge. Add mozzarella cheese and spread pulled pork in small chunks. Slice pickles horizontally and add to top.
3. Bake pizza for 10-15 min. until cheese is golden brown. Resist opening the oven door to release heat. Leave oven light on and peek through the glass to see progress. Pull pizza from oven and let rest 5 min. before cutting.
It sounds crazy that you would use yellow mustard and pickles, but after giving this a try I think you will be surprised how tasty this pizza is. I have made a lot of them and my guests love them. Enjoy!
