Easy to make picnic side dish with delicious flavor
In a large pot of salted water, add the potatoes and bring to boil. Cook for about 15 minutes or until the potatoes become soft. Test them with a fork.
While the potatoes are cooking, fry the bacon in a skillet until crispy. Save 2 Tbs. bacon fat from the pan.
In a medium-size bowl, combine the vinegar, mustard, sugar, olive oil, and scallions.
Crumble the bacon and add it along with 2 Tbs. bacon fat to the bowl. Stir together.
After the potatoes have completed cooking, drain them in a colander and mix them into the bowl
Add the fresh dill and salt and fresh pepper to taste.
This makes a perfect summer picnic side dish.
