Watermelon and Cucumber Salad

Nothing says summer more than fresh watermelon! I recently purchased a watermelon at a local produce market and decided to make a watermelon salad. My herbs are in full force. I have a good crop of basil so I combined basil, English cucumbers,and watermelon. I also added coconut water for a refreshing taste. I have made this with mint in the past but wanted to try basil this time. Give this a try. It is easy to make. It’s refreshing and makes a perfect light summertime meal for any time of the day.

 

 

Ingredients

• 2 cups diced watermelon

• 1 English cucumber, sliced thinly

• ¼ cup sweet basil, chopped

• ¼ cup coconut water

• 1 teaspoon honey (local if you have it)

• sea salt to taste

 

 

Instructions

1. Wash the basil in a colander.

2. In a large bowl, toss together the watermelon, cucumber, basil, coconut water, honey and sea salt.

3. Serve plated or in bowls.
