Nantucket Walnut Cranberry Pie

This is one of my niece, Brooke’s, favorite desserts! We made it especially for her the last time she visited from college. We also made it the day after Thanksgiving, knowing she would enjoy it. Also, yesterday, during a snowstorm and below zero wind chills (which caused schools and businesses to be closed for an entire week), a neighbor invited us to his home for dinner to sample a recipe he made from my blog. We bundled up in our winter coats and boots and trudged through the snow and howling wind to his house. We were very glad we did. We were impressed by his cooking skills and had a very enjoyable visit. We brought a bottle of wine and this pie for dessert.
Ingredients
• 2 1/2 cups cranberries (I used fresh cranberries)
• 1/2 cup walnuts, chopped
• 1 1/2 cups sugar, divided
• 2 large eggs, beaten
• 3/4 cup (1 ½ sticks) unsalted butter, melted
• 1 cup flour
• 1 tsp. vanilla
Directions
1. Preheat the oven to 375 degrees. Butter the bottom and sides of a 10” pie plate.
2. Spread the cranberries over the bottom of the pie plate and sprinkle with 1/2 cup of sugar.
3. In a large bowl mix the flour and the remaining 1 cup of sugar. Mix in the melted butter. Add eggs and continue to mix until smooth. Stir in the vanilla.
4. Pour batter on top of the cranberries. Sprinkle with walnuts and bake for 35-40 minutes or until the top is puffed and just beginning to turn golden in color. Cool before serving.
This is more of a cake than a pie. The cranberries give it a wonderful tart flavor. When combined with the caramelized sugar, it has a fantastic taste! This is very simple and only requires a few ingredients. Give it a try. I’m sure you as well as your guests will enjoy it! Not only are walnuts wonderful to eat they are healthy as well.
