Curry Dip

It is almost Memorial Day, and we are getting together with friends and family for a weekend of fun and some good old yard work. I thought I would make a healthy snack of fresh vegetables and a curry dip that I love. The dip is super simple and tastes great on veggies. Sometimes I add a little horseradish and garlic salt to this recipe to give it more of a bite. This time I kept it simple with just a few ingredients.

Ingredients

Curry Dip

• 1/3 c. mayonnaise

• 2/3 c. sour cream

• 1 1/2 – 2 tsp. curry powder (according to taste)

• 1 1/2 tsp. lemon juice (fresh)

 

 

Directions

I used a small glass bowl to make the dip. Then I transferred it into a more decorative bowl for the final presentation.

1. Mix the mayonnaise and sour cream. Add curry powder to taste. Add the lemon juice and whisk it all together.

2. Sprinkle some additional curry powder on top.

 

Wow, that was super simple. I sliced fresh carrots, turnips, radishes, and bell peppers and added grape tomatoes and snap peas to surround the curry dip. This was a delicious combination of veggies for this wonderful dip. I think next time I will add fresh horseradish sauce and garlic to give it more of a kick. This makes a healthy spring/summer snack.
